Ok. I won’t lie…the reason we put this one first was because it sounded like it was my least favorite of the four meals we picked this week. I’m not a fan of tilapia usually, and the intense raw onion flavor of scallion is not my cup of tea. I can handle it in small amounts, but a pesto made entirely of Scallion?? I was sure I would eat this on the side.
Color me impressed…with one or two VERY small tweaks, this was a restaurant quality meal I would NEVER have thought to make.
The dish is comprised of a very simple pan seared tilapia topped with the super flavorful scallion pesto (think chimi churri meets Cuban mojito meets Asian ginger slaw). The sides are simple steamed green beans and jasmine rice with ginger and a little soy sauce. Everything was very simple, easy to put together, straightforward instructions, and the flavors REALLY went well together. I accidentally threw all of the ginger in the rice and didn’t realize I was supposed to only put half. Luckily I had a whole ginger root in my freezer so I had plenty for the sauce. So we essentially tripled the amount of ginger the recipe called for. Honestly, it was a happy mistake because it really set everything off.
The package came with a recipe card which had very easy-to-follow instructions, a bag with the dry ingredients and fresh produce, and the tilapia, which I set out to thaw well in advance.
You do have to do a little bit of prep work, but if you are already planning to cook, this is already expected.
The portion sizes were just right. You don’t feel overly full, but you also don’t feel ravenous after the fact.
All I’m all, this was a 100% positive experience. We didn’t have that frustrating argument over what to have for dinner, and I didn’t have to make an additional stop to a grocery store or restaurant on my way home!!
