Bojour, mon petit phoodies! This weekend le Phoody brings you the most amazing, light, crispy, sweet and salty french cookie – Le Palmier. This cookie is easy and fast to prepare, and only requires three ingredients. The outcome is perfectly paired with ice cream, coffee or tea.
We prefer our Palmiers crispy and browned. However, you can cook them slightly less for a delicately crunchy cookie with a doughy center.
Prep time: 10 minutes
Bake time: 10 minutes
Ingredients:
- Puff Pastry
- 2 cups cane sugar or sugar in the raw
- 1 t. Kosher salt
1. Preheat oven to 400°F.
2. Mix sugar and salt in a bowl. Sprinkle 0.5 cup on clean counter-top.
3. Unroll thawed puff pastry onto sugared counter. Spread 0.5 cups sugar/salt mixture onto top side of puff pastry.
4. Using a rolling pin, roll out puff pastry until sugar is embedded into pastry.
5. Fold both ends of the rectangle in to meet in the center.
6. Fold once more…end into center to meet.
7. Fold one last time to close like a book.
8. Cut into small discs approximately 0.5″ wide.
9. Place on parchment lined baking sheet.
10. Bake for 5 minutes until bottom side is well browned. Flip cookies and bake for 5 minutes more.
11. Make sure you watch very closely, as the sugar can very easily burn. It’s a fine line between perfect caramelization and black death…
12. Remove from oven and allow to cool completely before serving. Once cooled, the cookie should be crisp, and easily break. If they remain too doughy, you can easily re-bake until done.
13. Serve with cafe au lait for a perfect afternoon pick-me-up. Bon apetit!
