Stage two of a great Mediterranean meal are these basic, yet amazing Greek Potatoes. They will make your home smell amazing, and they taste wonderful with minimal effort. This is definitely one of those side dishes people will think took way more effort than it really did.

Cook time: 1 hour
Ingredients:
- 2lbs. yellow or russet potatoes cut into long wedges
- Juice of two lemons
- 1 cup olive oil
- 1 T. Sea Salt
- Fresh cracked pepper
- 6-8 cloves fresh garlic
- 1 t. dry parsley
Baking directions:
1. Preheat oven to 425°.
2. Mix all ingredients into baking sheet and mix until potatoes are well coated.
3. Bake for one hour until soft, and edges start to brown.
