I would take shots of this “Greek Vinaigrette”

So, the next few posts together make one AMAZING Mediterranean meal. Let’s first start with the perfect Greek salad, which couldn’t be perfect without the perfect Greek dressing. Now, I am a sucker for a good vinaigrette, but this stuff…I could do shots of it. But I settled for just dousing my whole plate with it instead.

A standard Greek salad should consist of a good quality mescaline greens or baby spinach…or both. Then add bell pepper, red onion, cucumber, feta cheese, tomato, and Kalamata olives to make it great. To make it official, follow the recipe below to make the most amazing Greek Vinaigrette dressing.

Prep time: 5 minutes

Ingredients:

  • 1.5 cups red wine vinegar
  • 0.5 cups good-quality balsamic vinegar
  • 1.5 cups good-quality olive oil
  • 4 t. garlic powder
  • 3 t. onion powder
  • 4 t. dried oregano
  • 4 t. dried basil
  • 3 t. fresh cracked pepper
  • 3 t. sea salt
  • 3 t. Dijon mustard (the KEY)
1. Mix all ingredients well and place in sealable bottle. Toad Hallow makes a great champagne with a latch-cork top…perfect for a good buzz and a great dressing bottle!
