Belgian Waffles

Happy Easter! Today, The Phoody brings you the perfect item for that Sunday brunch you are hosting. Now, being perfectly honest, when I usually make waffles I go the Bisquick route for the sake of simplicity. However, these Belgian waffles offer a unique flavor and step up the class for those special occasions when you’re feeling over-zealous in the kitchen.

So be it Mother’s Day, Easter, Father’s Day, or just trying to get out of the dog-house…these Belgium waffles are sure to get your intended message across.

Prep-time: 10 minutes

Cook-time: 15-20 minutes

Ingredients:

  • 2 cups all-purpose or cake flour
  • 3.5 t. baking powder
  • 3/4 cup sugar
  • 2 eggs (separated)
  • 1 t. almond extract (can use vanilla, but almond is so much better)
  • 1.5 cups milk
  • 1 cup melted butter (did I mention this is not a health conscious recipe??)
  • Whatever toppings you desire (whipped cream, maple syrup, fresh berries, powdered sugar, peanut butter, preserves, cream cheese…the possibilities are endless!)
Cooking directions:
1. Mix all dry ingredients gently in one bowl and set aside.
2. Whisk egg yolks gently in a separate bowl. Mixing in one at a time, add milk, almond extract, and butter.
3. Fold wet ingredients into dry ingredients and mix gently until blended.
4. Beat egg whites until white and peeking. Fold gently into batter. Do not over mix!
5. Heat waffle iron and use as directed by manufacturer. Be careful overcooking these, the sugar in the mix can burn very easily. I also suggest using a non-stick cooking spray on the waffle iron to make removing the waffles much easier.
6. Remove and use toppings as desired.
